Fairmont Hotel Raises the Highest Herbs in Town

The Fairmont Hotel, in the middle of downtown Dallas, maintains a 3,000-square-foot herb and vegetable garden on its rooftop terrace level. A culinary team tends to the garden on a daily basis and Executive Chef André Natera incorporates the harvest into dishes on the hotel’s Pyramid Restaurant menu. The Fairmount also has two beehives in the garden that yield honey for use in the hotel, as well.

While the concept of the fresh-market approach for restaurants is gaining in popularity nationwide, for the culinary team at the Pyramid Restaurant & Bar, the commitment is epitomized by the local and regional sourcing of products, myriad house-made menu items and the largest hotel/restaurant garden in the area.

Seasonally, the expansive garden’s variety includes heirloom tomatoes; a variety of peppers; eucalyptus; Tuscan rosemary; lemon thyme; wooly thyme; Greek, Italian and Mexican oregano; basil; parsley; lavender and a wide variety of mint.Executive Chef André Natera

Now, fresh has been taken to a new level with Dining in the Garden at the Pyramid, which places guests in a quadrant of the garden atop the downtown hotel. Nestled amongst the green foliage, guests will experience a feast of the senses, with rich scents of rosemary, tarragon and basil filling the air and a dramatic backdrop of some of the city's most prominent buildings, while enjoying a unique menu, rich with the savory tastes of fresh garden produce. The immersive dining experience includes a seven-course garden-inspired menu.
