Farmers Market Guide - Summer Produce Recipes

Summer is a fantastic season to shop at your local farmer’s market here in Texas. There are tons of fresh fruits and vegetables ready to be taken home and cooked to make a healthy meal for your family.
Courtesy of our own Texas A&M Agrilife Extension, located at 17360 Coit Road in Dallas, here are some recipes that utilize fruits and vegetables that you would be able to find this time of year at your farmer’s market, or at a great value at your local grocery store.
ONE DISH CHICKEN GREEN BEANS AND POTATOES
YIELD: 4 SERVINGS
Ingredients:-
4 medium red potatoes cut
2 cups fresh green beans cut
1 pound chicken breasts
¼ cup olive oil
1 Tbsp Italian seasoning blend
Instructions
1. Cut green beans into bite size pieces.
2. Line one side of the pan with green beans.
3. Cut potatoes into bite size pieces.
4. Line opposite side of pan with the potatoes.
5. Line the chicken breasts down the middle of the baking dish.
6. Evenly distribute olive oil over the green beans, potatoes and chicken.
7. Sprinkle Italian seasoning blend over the entire pan.
8. Cover with foil and back for 1 hour at 350 degrees.
Calories: 420 per serving
WATERMELON CUCUMBER BALSALMIC SALAD
YIELD: 2 SERVINGS
4 cups watermelon cubed
2 cups cucumber cubed
½ cup red onion sliced
¼ cup basil chopped
2 Tbsp olive oil
½ cup balsamic vinegar
2 oounces Fat Free feta cheese crumbled
Instructions
1. Mix together watermelon, cucumber, red onion and basil.
2. Mix together olive oil and balsamic vinegar then pour over the watermelon mixture.
3. Top with feta cheese and enjoy
Calories: 110 per serving
YIELD: 4 SERVINGS
Ingredients:-
3/4 cup bread crumbs
1 Tbsp minced fresh parsley
2 tsps grated lemon peel
1 garlic clove minced
¼ tsp salt
¼ tsp pepper
2 Tbsp olive oil
4-4 ounce cod or other fish fillet
Nonstick cooking spray
Instructions
1. In a shallow bowl, combine bread crumbs, parsley, lemon peel, garlic, salt and pepper.
2. Brush oil over one side of fillets. Gently press into crumb mix- ture.
3. Place crumb side up in a 9×13-inch baking dish coated with cook- ing spray. Bake at 400 degrees for 15-20 minutes or until fish flakes easily with a fork.
